Blue Earth Lunch & Learns have come to an end, we’ll see you again in 2019!

Our lunch and learns in Blue Earth for 2018 have come to an end. A big heartfelt thanks to the Woodring Family, all our guest speakers, and faithful attendees for making the lunch & learns a success!

We’ll pick back up next year in March, if you have any ideas for topics please let us know!

Thank you to the First Bank of Blue Earth gals, Jane Bell and Jean Paul, for their time and knowledge on scams and how to keep you information safe in an age where it’s easy to get.

Memory Cafe, Crafting Cafe, Music Cafe…A-lotta-fun Cafe is what it’s shaping up to be!

Wow did we have a lot of fun at the Memory Cafe last week! Many funny stories were shared while everyone worked on their pumpkin flower arrangements and listened to music. (Check us out in the Register this week!)


Memory Cafe’s are a great time to step out of the caregiver – care receiver rolls and simply have a lot of fun with each other and others in similar situations.

Lunch & Learn Recipes and More!


We got some great fire prevention tips from the guys at the Blue Earth Fire Department today at our lunch and learn! Remember to check the batteries in your smoke detector and carbon monoxide detectors at daylights savings time (which is just around the corner!)

Recipes from today:

1 onion
2 celery stalks
2 carrots
1/2 c butter
1/2 c flour
4 c chicken broth
2 c cooked wild rice
2 c heavy cream
2 c cooked chicken
salt, pepper, parsley

-Saute onion, celery and carrots in butter until soft. 
-Add flour and stir to mix, cooking the flour for 1 minute. 
-Add broth. Bring to a boil stirring constantly. Turn down heat. 
-Simmer until carrots are soft and cooked stirring frequently so as not to burn the soup. –Once carrots are cooked remove from heat. 
-Add cream, chicken and rice. Allow to sit until warmed through.


2 c flour
1/2 c brown sugar
1 c butter, soft

3 (8oz) packages of cream cheese
3/4 c sugar, plus 2 T divided
3 eggs
1 1/2 t vanilla

3 tart apples
1/2 t cinnamon
1/4 t nutmeg

1 c brown sugar
1 c flour
1/2 c oats
1/2 c butter

caramel topping

-Pre-heat oven to 350 degrees
-Mix ingredients for STREUSEL TOPPING using a pie cutter or a fork. Set aside.
-Peel apples and cut into small pieces. Mix with spices and 2 T sugar. Set aside.
-Mix crust ingredients. Press into a 9×13 pan. Bake 15 minutes, remove from oven and set aside.
-While crust is baking mix CHEESECAKE ingredients. Place cream cheese into a bowl of a stand mixer. Mix with 3/4 c sugar. Add eggs, one at a time, and mix well. Add vanilla.
-Pour cheesecake mixture over warm crust.
-Sprinkle apples over cheese mixture.
-Sprinkle streusel over apples.
-Bake 40-50 minutes until cheesecake is almost set. It will be slightly jiggly, but not too much. Allow to cool. Pour caramel sauce over the top. Chill and serve cold.

Amazing. Our first Golf Tournament was a success! We weren’t quite sure what to expect for our first run at this type of fundraiser but man oh man we were sure blown away by the community’s support! We were able to raise over $2,000 in donations, one of our best fundraisers in recent years!

After a very rainy week, Friday, June 1st cleared up and the sun shone brightly for the event! Thank you to everyone that came out to golf and to those that stopped by to eat, socialize, and bid on the silent auction!

We received some great feedback, and are looking forward to putting on the event next year!

More Great Lunch & Learns!

A great big thanks to our speakers and guests who were able to make our May Lunch & Learns such a great success!

At our Blue Earth Lunch & Learn Alex Butterbrodt, the dietitian at UHD, gave us some great healthy, practical, and easy nutrition tips. We walked away with 10 recipes of easy to make, 1-2 serving size meals; along with easy ways to keep track of portion sizes, which food groups to eat more of, and great seasoning substations for salt!


Maintaining a Healthy Diet Handout 

At our Wells Lunch & Learn the IFC staff, Carol Soma, Mary Kay Laabs, Merry McGowen, and Dan Woodring, educated and trained the attendees on how to be a Dementia Friend. There was a lot of good commentary from the group on their experiences with those affected by a form of dementia and some great suggestions on how to be more dementia friendly.
